Chicken Chow Mein

(Serves: 2)


200g Medium Egg Noodles (4 nests)

1 tbsp Vegetable oil

100g Chicken breasts, cooked and sliced

1 Garlic clove, crushed

1/4 tbsp Fresh ginger, peeled and grated

1/2 Red pepper, sliced

25g Fresh shiitake mushrooms, sliced

2 Spring onions, fined sliced

1 tbsp Light soy sauce

1/2 tbsp Sesame oil


1. Cook the noodles according to pack instruction and set aside.

2. Heat the oil in a wok on a medium heat. Add garlic and ginger and stir together.

3. Add the peppers, mushrooms, spring onions and chicken and stir fry for 2 minutes.

4. Stir in the noodles and drizzle with soy sauce and sesame oil until heat through.

5. Transfer to a serving dish and serve hot.
