Beef Meatballs with Rice Pasta

(Serves 4)


1 pack penne rice pasta 500g

500g minced beef

2tbsp dark soy sauce


1 red onion, chopped

10g butter

1 tin chopped tomato with garlic 

1 small packet of basil

2tbsp extra virgin olive oil

Salt and pepper to season


1.Cook the rice pasta according to instruction until ‘al dente’ and set aside.

2.Place the minced beef into a mixing bowl and add dark soy sauce, Tabasco and black pepper to marinate for 10 minutes.

3.Use your hand to mix the meat and seasonings and form the mixture into small balls the size of large marbles and set them aside.

4.Fry the red onions in butter till soft. Add chopped tomatoes, fresh basil and season with salt and pepper. Cook for 4-5 minutes and set aside.

5.Heat the oil in a frying pan on a medium heat and fry the meatballs till brown and crispy.

6.Put the cooked meatballs and rice pasta into the tomato sauces and mix well. Serve when warm.
